A chewy red velvet cookie dusted in powdered sugar
Ingredients

1 1/2 cups flour

1 cup sugar

1/3 cup brown sugar

1/2 cup cocoa powder

1/4 cup unsalted butter

1 tsp baking powder

1/2 tsp salt

2 eggs
-
1 tsp vanilla extract

1 tbsp red food colouring

2 tbsp icing sugar
Directions
- Start by blending together both sugars and butter until light and fluffy. Add in eggs one at a time and then vanilla extract.
- Combine dry ingredients separately and then slowly mix into the wet mixture until fully combined.
- Roll balls slightly larger than 1 tbsp in a bowl with icing sugar and then bake at 350° for 14 minutes
Notes
- Be sure to fully & throughly coat the dough balls in icing sugar before baking to make sure it doesn’t get absorbed into the cookie during baking. Cooling your dough in the fridge for 10 minutes before handling can ensure the butter doesn’t melt and add to that problem.
